Oyster Mushrooms with Microgreens

A perfect way to enjoy the texture and flavor of Oyster Mushrooms, and an easy side dish for burgers, salad, steak, and more!

1 1/2 pounds of Oyster Mushrooms
2 tsp Olive Oil
1 tsp Soy Sauce
1 tbsp Butter
1 clove Garlic, minced
Salt and Pepper

Slice mushrooms into individual pieces, heat olive oil over medium heat, then toss the mushrooms into the pan with the soy sauce, toss to coat them evenly, then allow to cook 3 minutes on each side without stirring. Scooch mushrooms to the sides of the pan and add the butter and garlic together in the middle, allow garlic to cook for 30 seconds, then stir mushrooms and garlic together and allow to cook 1 more minute.

Remove from pan and toss with chopped microgreens and serve warm!
