Green Goddess Dressing and Dip
Greens of your choice could be carrot tops, sassy mix, kale, turnip tops, radish tops, microgreens, herbs, ANY greens we grow could be utilized! Our phot for this recipe is a past spring No Thought Box our first year where we grew almost nothing but salad greens! We have grown so much since then, adding so many vegetables to our farm!
2 cups of Greens of Choice
1 Shallot or 2 Green Onions
2 Garlic Cloves or 1/2 of a Fresh Garlic
1/4 cup Citrus Juice (Lemon, Lime, or Orange)
1/4 cup Olive Oil
2 TBSP Apple Cider Vinegar
1/2 cup Nuts or Seeds
1/3 cup Nutritional Yeast (optional)
Salt, Pepper, zest of Citrus fruit
This recipe is very versatile! You can use ANY greens, pea greens are our favorite, spinach, kale, sassy mix, and even the braising mix are wonderful. Again the nuts and seeds could be any, however softer varieties are better such as hemp hearts, sunflower seeds, cashews, or walnuts.
Place all ingredients in a blender, or jar to use a stick blender. Blend until smooth.
Use as salad dressing, veggie or chip dip, or even sauce over chicken.
