Celery Salad with Parmigiano

8 Celery stalks, remove leaves and put aside, julienne celery

4 Medjool dates, chopped finely, OR ½ Raisins

½ cup Roasted Almonds, roughly chopped

3 tbsp Lemon Juice

¼ tsp Chili Flakes

Salt and Pepper

2 ounces Parmesan Cheese, shredded

Olive Oil

Put celery in a bowl of ice water for 20 minutes to heighten crispness. Drain, pat dry, and place in a bowl. Add chopped celery leaves and rest of the ingredients, add salt and pepper to taste and a ¼ cup olive oil. Enjoy served cool.
