Adapted Version of Pioneer Woman's Green Goddess Cucumber Chicken Salad

For the Dressing:

  • garlic cloves
  • 1 shallot, peeled
  • 2 Tbsp. lime juice (from 1 lime)
  • 2 Tbsp. lemon juice (from 1 lemon)
  • 3 c. packed kale or chard
  • 1/2 c. basil leaves
  • 1/2 c. parsley leaves
  • 1/2 c. mayonnaise
  • 1/2 c. sour cream
  • 1/2 avocado
  • 1/4 c. grated parmesan cheese
  • 1 1/2 tsp. salt
  • 3/4 tsp. ground black pepper

For the Salad:

  • 4 c. finely chopped cabbage 
  • 1 1/2 c. finely chopped cucumber
  • 4 scallions, thinly sliced
  • 3 c. finely chopped rotisserie chicken
For Dressing: Combine all ingredients in a blender and puree.
For Salad: chop all items, combine, and toss with salad!

Enjoy with your favorite chips, crackers, or other veggies!
